When I meet Ixta Belfrage on a fall morning in East London, the vibrant pink beret she’s wearing is the exact hue used in the cover design for her hit cookbook, Mezcla, recently released in the U.S. “Oh no!” she laughs. “It’s a total coincidence, I promise.” Whether accident or design, however, it does feel appropriate given Belfrage’s unique style of cooking, in which the rich, considered color palettes are almost as exciting and varied as her flavors.
Her mango and cheese salad with jalapeno and lime contrasts orange and green with delicate pickled pink shallots, in a perfect mix of sweet, salty, and vinegary zing. The aptly named “onion party,” a dish that sees the allium variously fried with turmeric, roasted to char, and soured in lemon juice, before being served all together, has a similarly celebratory look. And her famous shrimp lasagne with habanero oil—“probably the dish I’m most proud of, actually,” says Belfrage—comes out of the oven a deep, volcanic red. She describes the lasagne as the “purest representation of me; a tribute to the countries that have shaped me as a person and a cook.” It’s also a recipe that represents the three cuisines Mezcla predominantly celebrates: Italian, Mexican and Brazilian.
The Brazilian comes from her mother, who grew up in Cuba via Mexico, informing her childhood awareness of Latin and South American food. At three years old, her family moved to Tuscany for her father’s job working with Italian wine producers; subsequently, her formative childhood years were mostly spent there. “We lived in the old servant quarters of a beautiful 15th-century villa,” Belfrage writes in the introduction to Mezcla, “surrounded by rolling Tuscan hills, vineyards, and olive groves as far as the eye could see.” Her mixed heritage and varied experiences led to Belfrage developing her cooking style, one that she describes as ‘‘unapologetically fusion.”
